Cosaic partners with Ingredion to commercialize fermentation ingredient platform
Key takeaways
- Cosaic and Ingredion form partnership to commercialize yeast-derived emulsion ingredient globally.
- Cosaic Neo offers dairy-like functionality without animal ingredients across beverages, sauces and spirits.
- Ingredion will support US market entry and co-develop new products to expand Cosaic’s portfolio.
Biotech startup Cosaic has formed a strategic partnership with Ingredion to commercialize its fermentation-derived ingredient platform. Ingredion will support Cosaic’s go-to-market strategy starting in the US and co-develop new products to expand the startup’s portfolio.
Cosaic’s ingredient, Cosaic Neo, is a yeast-derived emulsion that provides dairy-like creaminess and stability across functional beverages, meal-replacement shakes, dressings, sauces and spirits without animal-derived components. The ingredient combines fats, proteins and fibers in an integrated microstructure.
“From improved texture, to taste, to performance, Cosaic leverages a deep knowledge of biotech innovation to develop a novel, multi-functional ingredient platform that will allow us to innovate foods with customers in ways never before imagined,” says Mike Leonard, chief innovation officer at Ingredion.
Cosaic says traditional food formulations typically blend fats, proteins, and carbohydrates from separate sources and rely on additives to achieve cohesion. Cosaic Neo’s microstructure integrates these molecules without additives while maintaining clean label status, according to the company. The ingredient offers eight functional and sensory benefits in a single animal-free component, the company says.
Cosaic developed the ingredient through fermentation processes that produce the emulsion structure from yeast.
“Partnering with Ingredion marks a pivotal moment for Cosaic,” says Tomas Turner, co-founder and chief executive at Cosaic. “It validates the years of research we’ve poured into reimagining what ingredients can do.”
Turner says the partnership combines biotech innovation with industrial expertise. “With Ingredion's global reach and technical excellence, we can accelerate commercialization and make clean-label creaminess a scalable reality,” he says.
Ingredion will help Cosaic implement its market entry strategy and co-develop new products. Cosaic’s current portfolio includes solutions for performance drinks, meal-replacement shakes, dressings, sauces, and spirits.
