French-owned family business Prova specializes in manufacturing extracts and brown flavors. At this year’s Food Ingredients Europe, the company unveiled an expansion of its Protec functional solutions range, which helps with flavor masking notes from pea and whey protein flavors. Marie Le Beller, product manager at the company, tells us how its experts are also working on new technical solutions, such as rebalancing the sweetness perceptions of food applications, as new taste trends continue to disrupt the industry.
