Symrise expands AI platform for optimized formulas and faster NPD
Key takeaways
- Symrise expands Symvision AI with new AI-based formula prediction tools that accelerate flavor and product development.
- The upgraded platform predicts sensory outcomes, guides formulation changes, and integrates machine learning with flavorist expertise.
- Symvision AI’s interactive dashboard enables targeted flavor design and helps manufacturers adapt to market shifts.
Symrise has expanded its Symvision AI platform to include AI-powered tools for formula prediction, helping manufacturers speed up taste and F&B development. The tool supports “targeted flavor design” and specifically caters to low-sugar and low-sodium products, meeting the rising consumer demand for healthier lifestyle options.
The toolkit taps data to predict sensory characteristics in prospective product formulations. Its advanced AI capabilities support flavorists in forecasting optimal formulations and their sensory performance with “high precision,” says the Germany-based firm.
“Evolving consumer expectations, sudden price shifts, and supply chain events drive the need for innovation and swift formula adjustments. Symvision AI delivers exactly that — it empowers us to innovate faster and smarter,” says Leif Jago, global marketing manager for Food & Beverage at Symrise.
The Symvision AI design toolbox also predicts the impact of formula changes, guides taste development, and supports manufacturers to respond to market changes — “rapidly and precisely,” he adds.
Symrise will discuss how Symvision AI can help brands identify new market opportunities and predict emerging dishes before they become mainstream in an exclusive webinar with Food Ingredients First today at 3 PM CET.

Predicting flavor profiles
Symvision AI’s sensory design features consist of an “interactive dashboard cockpit” that visualizes formulation and sensory characteristics.
For instance, the platform helps predict the resulting sweetness profile and identify gaps in taste intensity while developing reduced sugar formulations.
It then guides related formulation options, including symlife taste balancing solutions, to bridge those gaps. This process leads to “optimal taste in both new and reformulated products,” says the company.
Optimizing taste formulation
The tool helps manufacturers optimize taste in F&B products with “science-based” formulations to enhance sensory appeal and market fit.
Symvision AI combines flavorist expertise with machine learning to create adaptable and tailored recipes. It also offers tailored solutions by developing recipes using what Symrise calls a “unique combination of deep flavorist expertise and machine learning.” These recipes are easily adaptable to individual ingredient restrictions and regulatory changes.
Manufacturers can also accelerate their innovation cycles through predictive modeling and impact forecasting for faster commercialization.
“We combine the profound expertise of our specifically trained flavorists with machine learning. This approach shortens development cycles and unlocks exciting possibilities in taste creation,” says Gerhard Krammer, SVP Research & Technology at Symrise Food & Beverage.
Symrise uses a “novel flavor design” approach with a multi-step process for faster identification of ideal formulation options.
It starts with ingredient selection to choose the most promising raw materials from Symrise’s proprietary portfolio, followed by prototype selection. This step is followed by sensory and consumer testing to verify sensory characteristics and build predictive models.
The final step is “flavoristic creation refinement,” which delivers optimal market solutions based on flavorist expertise.
